Senescent begins life as an American porter fermented with our house ale yeast. We then transfer the beer to oak barrels and add a blend of brettanomyces, lactobacillus, and pediococcus. After a year in barrels the result is a very complex sour beer featuring notes of dark fruit, cherry, chocolate, and vanilla.
